Several years ago I hosted a luncheon to launch the first three books in my With Faith Like Hers Bible study series. The books were I am Eve, I am Ruth and I am Esther.

To add to the fun, I created dishes to go with each of the three women of those books. Over the years, I’ve had requests for these recipes. So here they are for you. Enjoy.

Eve’s green salad reflected her life in the lush Garden of Eden with chopped apples (representing the forbidden fruit) and fig dressing that reminds us of the fig leaf clothing she and Adam fashioned.

Ruth spent hours gleaning in Boaz’ barley fields. Then she bundled it up and carried it home where she and her mother-in-law Naomi may have made some of it into this thick and hearty soup.

These tasty filled cookies—Hamantachen—are a traditional treat eaten each year by Jewish people around the world during the holiday of Purim, to celebrate Queen Esther’s part in God’s victory. They are generally shaped into a pinched triangle to represent the odd hat that evil Haman wore in his position within the Persian court. I cheat and fold them over like tiny turnovers. They’re yummy, whatever shape they’re in.
